Move over Nigella … here comes Annabella
In Matthew’s book Scattering Church, he mentioned an evening we hosted around the theme of the movie Chocolat. Around a dinner table in Lambton, Bella served up a meal in which every dish contained chocolate. Here are some of her recipes …
Soupe aux chou-fleurs et aux noix au chocolat blanc
(Cauliflower and walnut soup with white chocolate)
Ingredients
Before …
- 1 leak or 3 spring onions, finely sliced 
- 30g butter 
- 2 litre of vegetable or chicken stock (we just made it from 4 stock cubes in hot water) 
- 1 cup walnuts 
- 1 large (or 1½ small) cauliflower, roughly chopped 
- 100g white chocolate 
- 200ml (⅔ cup) dry sherry 
- (Optional) potatoes 
- (Optional) salt and pepper 
Method
… and after!
- Gently saute leak (or spring onions) and walnuts in butter until soft 
- Add chopped cauliflower and stock 
- Bring to boil and gently steamed until cauliflower is cooked. (One or two potatoes could be added at this point to extend the quantity.) 
- Add sherry and white chocolate 
- Return to boil for 3 minutes to give the chocolate time to melt 
- Take the pot off the heat and sit for 5 minutes 
- Blend 
- Add salt and pepper to taste 
- Garnish with cream and crumbled walnuts
